Multiphase flows are never stable! At every scale they are characterised by instabilities. They are beautiful and mesmerising to look at and have profound impact on the design of equipment. However, quantifying instabilities is not a trivial task let alone relating these to the design. In this talk, by means of examples, I will try to show what I have learnt over the years and still learning in this fascinating topic and how that has impacted process design.
